I'll go with a classic for this response - Elizabeth Bennett and Fitzwilliam Darcy. I love the slow burn of their relationship and their intellectual back and forth. The sparks fly between them in spite of their differences. They bring out the worst and ultimately the best in each other. Their pairing feels hard-earned and satisfying. A definite favorite!
