Various is the correct author for any book with multiple unknown authors, and is acceptable for books with multiple known authors, especially if not all are known or the list is very long (over 50).
If an editor is known, however, Various is not necessary. List the name of the editor as the primary author (with role "editor"). Contributing authors' names follow it.
Note: WorldCat is an excellent resource for finding author information and contents of anthologies.
c2010. Part of the Christmas 10 haul. Great premise for a quiz book but the layout does not lend itself to being used as an actual game with other people as it takes longer to find the answers in the back of the book than to read the questions. They are really hard questions too! However, a great book to work through to get some additional general knowledge of an uncommon kind into the old grey cells. I plan to use this book but perhaps in a somewhat different way than was intended.
