I’d think it would be hard to be an atheist since these gods are not an abstract concept in their world. Rejecting the gods would be very different than not believing in them. But then people are endlessly capable of believing or disbelieving many thing in the face of overwhelming evidence, so ...
Yeah, I'd think it would be hard to impossible to be an outright atheist. I think there could be people who refused to serve the gods, but people who didn't believe they existed would be a very small, niche group if they existed at all.
There are people who turn aside when the gods send them on a mission, there were comments on that for Curse of Chalion about how many were despatched in response to prayers, but for those particular prayers in the story, only Caz arrived.
A question is how gods are defined. We see that there is disagreement with the Bastard. But that could extend to the others as well. In our world we see conversion to Christianity has brought over native gods as angels. There is a long history of people believing in gods who aren't omnipotent.
I often wonder if I would like living in that world or not. I don't see any evidence of gods in our world, but wish there were sometimes.
