There is a short story featuring Erik in the future where he visits Merlottes and meets Sookie's descendants. I've read the story but can't remember which anthology.
I found the book with the Eric story. The book is Dead But Not Forgotten: Stories from eh World of Sookie Stackhouse. The story is Widower's Walk. The stories in this anthology were written by other authors. It was edited by Charlaine Harris and Toni L P Kelner. I enjoyed the different takes into Sookie's world but this story about Eric was the one I remember the most.
