This is similar to the way Stephen King says he writes, letting the characters determine the flow of the story. However, with something like the MaddAddam trilogy, I would think that you either had to structure it pretty specifically from the beginning or go back to book 1 after book 2 was written and fill in some of Jimmy's love interests after the fact. Whichever way it was done, it was artfully done. Kudos.
