Mark Watney would be the ideal candidate for showing new settlers how to ration and survive a volatile planet with his experience from the first book. Surely there's somewhere you could go with that kind of path?

I personally would have love to see and epilogue. A summery of what Mark went through when he got back to Earth.

Not so much Mark maybe, but on Hermes's return we just have to sort of assume that because Mark was picked up from Mars by the Ares 3 crew on Hermes they all made it home safely, or not.
