You should add them as separate editions, specifying "Volume I" and "Volume II" in the title field, i.e., "The Old Curiosity Shop: Volume I".
In the "Edition" field, I would be inclined to add the information that they're part of a two-volume set, i.e., "Two Volume Edition".
You should not combine either of you new entries with the single volume edition. You can combine the volumes with any other editions of a two volume set, but you should not, for example, combine Volume I of a 2-volume set with Volume I of a 3-volume set.

You can add a librarian note though to specify that is part 1/2 of 2 volumes and not to combine it with the complete novel.


Why not? That seems appropriate in the edition field.
I want to add entries for a two volume edition of the Heron Books Centennial Edition of Charles Dickens' The Old Curiosity Shop that I have as I cannot find them listed on GR, but as it is split over two volumes (Old Curiosity Shop I, Old Curiosity Shop II) I wanted to double check if it was right to add them both as alternate editions of
