Hi Ben - Japanese lit is my jam! What genre are you looking for? Off the top of my head I would recommend The Housekeeper and the Professor or Kitchen for fiction that's short and sweet and a bit unexpected. Both books leave you feeling pretty good about life, which I think we could all use more of these days.
For something darker, Ryū Murakami does terrifying and grotesque like no other. Yukio Mishima has stories that aren't quite as dark (well, mostly) but his life story is one of the most fascinating I've ever heard.
And if you're feeling like tying pop culture threads, the film version of Silence is making waves, and is an interesting book about persecution of Christian missionaries in Japan.
But for Hong Kong-ish, I loved The Paper Menagerie and Other Stories which has stories set all over East Asia (I know there's one in Hong Kong and one in China)

I'm going to check out some Brazilian, Chilean, Turkish, and Romanian settings/authors and see what I can come up with for January!
