Science Book Chat discussion

When I am looking for a new book I usually ask friends for some recommendations but on this topic nobody I know can really recommend any good reads. So instead of looking through some reviews for books I want to use this platform and ask YOU for some recommendations.

I am looking for a general book about water. It should be rather sophisticated but not like a textbook and more like popular scientific. Since I myself have a scientific background (chemistry) please no spiritual or homeopathic books.

It also would be nice if you not only recommend a book but also write a few sentences about what it is like and what you (dis)liked.
