Gelato agli amaretti / Ice cream with amaretti biscuits

- ½ liter fresh cream
- 3 or 4 eggs
- 6 tablespoons of sugar
- some «amaretti»* of the dry sort or other dry biscuits, in crumbles

Beat the yolks with the sugar till they are almost whitish. Whip the cream. Beat the egg whites till they are stiff.
Put the egg whites in the cream, then add the yolks and the amaretti, mixing delicately.
Put the ice-cream in the freezer for some hours. The best thing is to use a fairly flat bowl.

200 gr chocolate,> 70 % cacao
200 gr butter
150 gr sugar
4 eggs
80 gr flour
Lemon

Prepare the bake form with a bit butter
Melt the chocolate in a warm water bath
mix it with the butter

Meanwhile mix the sugar,eggs and the rasped lemon peel.

Put the two mixes together

Preheat the oven at 200 degrees.
Bake time 18 minutes
The inner mass should remain weak (it hardens when the pie cools down.

Mmm, chocolate! What do you use as the bake form, Sabine? Crushed biscuits, maybe?

Sabine | 3041 comments No I give only the mix in the bake form. The first time I was surprised that it hold the shape of the form. You can use a baking parchment, and don't give butter in the form.

This looks delicious, but isn't there supposed to be a little bit flour in it? (80 gram Mehl in the original recipe)?

Na | 354 comments Here some sugary small bites the size of truffles we make for the children during Christmas with cold 'desert roses' (Roses des sables). It is really sweet so adapt the sugar up to your taste.

[Recipe] Mandarinettes
Ingrédients :
● 200 g peeled carrots.
● 200 g caster sugar.
● 200 g dessicated grated/shredded coconut powder (-> this).
● * (Optional) 2 teaspoon of orange-based liquor (ex: Triple-sec, Curaçao, Grand-Marnier...).
● * (Optional) Green marzipan/almond paste.
● Granulated sugar.

 
Cook carrots for 2 minutes.
Drain well and grind.
Add sugar, liquor, coconut powder.
Shape into balls, roll in granulated sugar.
Put into paper candy cups, and add green marzipan/almond paste shaped into small leaf on top for it to look like the fruit.
Place in the refrigerator to harden.

ETA: corrected "marzipan" into "almond paste"

HJ | 3603 comments Funnily, I understand "marzipan" when I didn't immediately understand "almond paste". So, do they look like oranges? I'm guessing the carrot colour dominates even after having coconut added.

This is definitely the best way to eat fruit and vegetables.

Na | 354 comments Oh okay. I wasn't sure about marzipan and almond paste. I've corrected and add both. My mother's original recipe included instead candied angelica--but we didn't liked it and never used it. :P

And yes, they look like mini orange balls.

ETA: The Twin found the recipe with slight changes in proportions and a picture here (in French): Truffes aux carottes et à la noix de coco.

Ok, so I have two recipes to add to the collection, so I'll do two separate posts. I also want to mention that over on Aleksandr Voinov's GR group, there is a recipe thread with some recipes I'm going to be trying out very soon! They all look and sound really interesting!

Anyway, here's the first of my two:

Spaghetti is my all time FAVORITE meal. Ever. This recipe came from my grandmother who got it from an Italian friend whom I never met.

1 pound hamburger
1 large can tomato puree
2 small cans tomato paste
1 medium onion chopped
1 green pepper chopped
2 bay leaves
little more than a pinch of oregano
little more than a pinch of garlic powder
pinch of salt
pinch of ground pepper

Brown the meat, onion, and pepper together. Once browned, put into a large pot and add in puree. Take the empty can and fill it with water. Add water to meat, onions, and pepper. Add in the rest of the ingredients: paste, bay leaves, oregano, garlic powder, salt, and ground pepper. Stir everything, and simmer for three hours, stirring occasionally.

Slow Cooker Method: After adding everything into the pot as mentioned above, bring it to a boil before putting it all into the slow cooker. Set it on low for three hours. No stirring is needed. Put it on and walk away. You won’t even burn the pot or the sauce and it still tastes fantastic!

Feeds 6-8 people generously and is also perfect for freezing for months of enjoyment, for one or two people. I make one batch and freeze it in two serving containers. I take them out one at a time and have sauce for months!

And the chili recipe. This is my version of my Mom's recipe, though I have no idea where she got it from. Her's calls for red kidney beans, but since I don't like them, I leave them out. If you like beans, it needs two cans of them, drained, I believe.

4 chopped onions
2 chopped green peppers
2 pounds of hamburg
4 small cans of tomato paste (or one large)
Garlic power
Paprika
Salt
Ground black pepper
2 tablespoons (heaping) Chili powder

Brown the hamburg with onions and pepper, add some garlic powder, salt and pepper, and chili
powder. Use 2 cans from the paste fill with water and add. Simmer for 2 hours on the stove or in a crock pot.

Again, for one or two people, this freezes well for a few months of enjoyment, depending on how often you make it. This recipe doesn't make as much as I'd like. I'll need to fiddle with it to make more so it lasts longer. I love this stuff!

Serve with cheese sprinkled on top. Cheese can be any variety from Mexican Taco cheeses to plain cheddar. Eat it with corn chips, the Tostitos Scoops are perfect for scooping chili and cheese. :-) OR you can turn it into Frito Chili Pie, as my southern friend does, which is also good: Sprinkle the bottom of the bowl with Taco cheese, put a handful of Fritos on top, a few scoops of chili, more cheese sprinkled on top, then mix it all together and enjoy. Either way is good. :-)

You'll also notice I use a crock pot a lot. That thing saved my life. I used to burn pots before I got a crock pot. Once, I was making spaghetti sauce and it burned so bad I just took the sauce, pot and all, right outside to the dumpster and that was the end of that pot. :-( Crock pots are amazing. Easy to deal with, and they clean up well. :-) *gets off soap box now*

You're all making me hungry. Guess I'd better go get dinner. I'm just sad that I don't have chili made or Spaghetti sauce defrosted! :-(

HJ | 3603 comments Jordan, these are two of my favourite foods, dating from childhood. These days I use Quorn (or other "vegetarian meat") instead of hamburger (or mince, as we call it), and then it can be eaten by the whole family, vegetarians included. The meat-eaters never notice! Incidentally, this makes it even better for students and others on a budget to make, since Quorn is cheaper than meat.

We also use tinned chopped tomatoes in place of some of the tomato paste or puree, since this adds texture/body.

I find both taste better when left in the fridge overnight, as the flavours infuse. I've never dared use that much chilli powder!

3 lbs boneless, skinless pork shoulder
1 tsp salt
1/2 tsp pepper
1 Tbsp vegetable oil
1/4 c tomato paste
1/4 c packed brown sugar
2 c chicken broth
2 sweet onions, thinly sliced
3 cloves garlic, minced
2 chipotles in adobo, seeds removed, and chopped plus 1 tbsp. adobo sauce
2 mangos, diced, or 2 c frozen mango chunks, thawed
1/4 c chopped cilantro
cooked grits or polenta

season pork with 1/2 tsp salt and 1/4 tsp pepper, heat oil on medium-high heat. Brown pork on all sides, about 6 to 8 minutes. set aside
I bowl of slow-cooker stir remaining salt and pepper, tomato paste, brown sugar, and chicken broth. Add onions, garlic, and chipotles. Place browned pork on top. Cover and cook on HIGH for 6 hours or LOW for 8 hours. With 30 minutes remaining, add mangos.
Stir in cilantro. Serve over corn grits or polenta

I always throw in a big handful of shredded cheese to my grits/polenta.

This is one of my favourites too, with the minced meat, though. I also use a mix of tomato paste and tomato chunks in it. I just recently learned to put in a little of star of anis ( I don't know the real English name for it) to cook together with it, and also a sprinkling of sugar, both enhance the richness of the tomato.

Anne | 6816 comments I am visiting with my father and two of my sisters on the West Coast this weekend, it has been raining something fierce here :). Yesterday my twin sister and I made dinner for all of us, three children and five adults, my sister's famous deer meatballs with mashed potatoes ( this is deer country) , and I made a super easy but delicious apple crumble. Just the right dessert for a rainy, windy fall evening:

4-6 crisp and a little tart apples, peeled and cut into thin wedges.
Mix them with sugar and cinnamon and put them in a pie form or baking pan.

Make a dough of
200 gram butter
200 gram flour
50 gram sugar
Put it in a bowl and use your hands to mix it all together, the dough shall be a little crumbly. Cover the apples with the dough, bake in oven for 15-20 minutes in 200 c or until it is golden brown. Serve while still a little warm, with ice cream.

There was perhaps one serving left when we were finished, so it easily serves 8 people.

By the way, to have your hands in the bowl while kneading the butter and flour together is a very tactile experience, a soft texture through my fingers. Make sure to wash your hands first! Not to mention afterwards :)

That sounds great, Anne. I love apple crumble, but I don't have a really good recipe, so I look forward to trying yours. I think apple crumble is a very international dessert. So many countries have a version. And I, too, love kneading things when baking. Especially warm dough. It is a nice feeling.

Yay a new recipe added to the repertoire. Also, I have now used Chipotle in adobo sauce, which I have never used before. I'm going to make some beef chili with it. I'm getting tired of chili powder.

I am so glad you liked it. This recipe has become one of my go-to favorites. There is also a curry variation. Omit the sugar, chipotles, and one cup of the broth. Cube the pork before browning it. Add to slow-cooker, with other ingredients (except mangoes and cilantro) as well as one 14.5 can of coconut milk, a 2 inch piece of ginger (peeled and grated), 1 Tbsp curry, 1 Tbsp garam masala and 1/4 tsp cayenne. Add mangoes in the last half hour, and cilantro before serving. Serve over rice.

I'm only now reading through the posts in this thread, so that's why I'm so late commenting your post, Dyan! Sorry about that!

I actually have a Pinterest board for recipes. That was one of the very first boards I made! LOL. And I totally agree with you — it's comes handy quite often! :-D

Just keep in mind that the chipotle pork and the curry pork use the same basic recipe. You just switch things out for one or the other. I love them both.

This reminded me that I found a recipe for simmered mango rice. I'm going to try that with jerk chicken.

Idamus Drømmekage/dream cake
The cake.

50 g margarine
300 g flour
3 table spoons. baking powder
1 t s. vanilla powder
3 eggs
250 g sugar
2 dl water

Topping

125 g margarine
1/2 dl water
100 g coconut flour
250 g brown sugar

Mix eggs and sugar.
Melt the margarine and add it.
Add flour, baking powder and vanilla sugar, while slowly adding the water.
Bake for 20 minutter at 200°C. in a regular oven.


Melt the stuff for the topping, add it in a thin layer on top of the cake.
Let it rest for 5 min AND EAT.

(Personally I like to make a double portion of topping stuff)
