I haven't read it so it's a bit of a guess but maybe Monument 14 for the mall one. I thought of This is Not a Test too.

It is may actually be two books with very similar plot lines, that may actually be the same book and I am just misrembering details.
The MC is a girl.
I think the school one was very similar to This is Not a Test and the one in the mall was like that but in a mall or grocery store.
It was YA and set I think in a small town.
There was zombies or a plague or something that hit while people were at the school/shopping.
I remember in the mall one there was an older guy who got creepy after a while.
I think in the school they were alone, just the teens.
I think the cover was blue or grey.
