I am listing a few to get started below. Just a word of advice--go to your public library and ask the children's librarian there for suggestions also. She or he will have a better idea of what is available in their library.

Thanks Beverly, Unfortunately, our libraries are closed due to the COVID-19. I've checked out the books you suggested. I see that they are picture books. Would you know of any books on the same theme, but for the next level up, ie early readers/ chapter books?

Yes, ours are as well, but they will open up again one day. The picture books that I listed probably are more suitable to the 5 - 6 year old age range rather than the 8 year old age. However, A Baby Sister for Frances is also a picture book.
I will put on my thinking cap for older books, but picture books are my expertise.
