I'll second the Immortals After Dark series. Every couple starts out as some kind of enemy because the whole premise of the series is based on what the Lore creatures call "the Accession" and it bringing together 'mates' cross-factions and cross-species. Vampire with lykae, demon/vampire with witch, demon with valkyrie, and so on for 18 books.

They are pretty good if you can get past A Hunger Like No Other, which you can totally skip if its not your jam. The other books are way better.

I just read it and really enjoyed it.
It's a 3 book series and the couple hate each other for most of it. I didn't enjoy all the angst but others seem to really like it.
Slow burn. The couple don't like each other for maybe the first 3 books in the series then fall in love.
She's a bounty hunter and he steals her mark so their hate each other for a while. 11 book series featuring 3 main couples that switch off being the lead of the books.
