These refrains don't really build but for animal lovers, the books by Marianne Berkes such as Over in the Ocean: In a Coral Reef and Over in the Arctic: Where the Cold Winds Blow: Where the Cold Wind Blows might still appeal as they follow the "Over in the Meadow" song.

Bringing the Rain to Kapiti Plain: A Nandi Tale by Verna Aardema is a great one. It's an African Nandi folktale that introduces a diverse and different landscape, told in this format.
