There Was an Old Lady Who Swallowed a Fly has many incarnations and readalikes.

Then there's One Fine Day and others like it that I can't remember right now.

I'll put my thinking cap on for other books with the refrains that build... I know I've read plenty and hopefully some will come to me. The list Cheryl posted is excellent and a few from there I would highly recommend:
The Cazuela That the Farm Maiden Stirred
The Apple Pie That Papa Baked
Ohana Means Family
Bringing the Rain to Kapiti Plain: A Nandi Tale
Jack's Garden

These refrains don't really build but for animal lovers, the books by Marianne Berkes such as Over in the Ocean: In a Coral Reef and Over in the Arctic: Where the Cold Winds Blow: Where the Cold Wind Blows might still appeal as they follow the "Over in the Meadow" song.
