I recommend Circe by Madeline Miller. I remember the Minotaur, and perhaps others.
I am not sure what kind of books you like but you can check out the reading plans thread. That might give you some ideas. :)

I am hoping to use The Cottingley Secret - fairies are integral to the story ... whether they were/are real is still being debated!

yes the book does need to feature a mythical creature.

Thinking of Magic Tides, which features werewolves, lion shifter, vampires, minotaurs and mermen, but not explicitly mentioned in the blurb, though does have vampire and shapeshifter mpg....

Does this work? Is this enough information?
Just want to query Biomega, Vol. 3: the blurb describes "zombie-like drones" (i.e. humans affected by a virus) and seems to pretty clearly be spinning the setting as a zombie apocalypse type thing. It's a pretty common modern zombie trope, so is that good enough, or does it have to be a traditional folk tale case of "these things are walking corpses"?
I'm probably overthinking this, but being so close to the end of the challenge I want to make extra sure I've got it right!

In 1933 the legend of the Loch Ness Monster was born. The first sighting was in April but it the story didn't take flight until after the second sighting. A local couple claimed to have seen "an enormous animal rolling and plunging on the surface." The mythical creature became a media phenomenon with London newspapers. Throughout history there have been many expeditions sent to locate and capture this creature. To this day the Loch Ness Monster remains legend.
