They are both lovely! The blue cover gives more focus on the horse and rider. The sunset one spreads the focus around the page. Also it is easier to read the blurb and other text on the blue cover.
For young people especially, your cover should not present too much work for a reader - this is your selling pitch. You say the book is for adults, but with horses, YAs will be looking.

I’ve just finished writing my first novel - which is for grown-ups and (of course) is all about horses. It’s with my copy editor at the mo, but in the meantime I really need to decide on the cover design - and, as I’m rubbish at decisions, I’m really hoping for some help.
