First up recommendations based on specific past picks the club has done:
If you liked the female lead and mythological feel of Mists of Avalon, try Daughter of the Forest by Juliet Marillier
If you liked the long storyline, many veiwpoints and intrigue of Game of Thrones, but want something that's just a little tighter and contained, or simply something that is safely completed, try Spirit Gate(Crossroads trilogy) by Kate Elliott
Enjoyed Death by Black Hole and looking for more non-fiction that's non-scientist friendly? Periodic Tales: The Curious Lives of the Elements.
Looking for more light silly humor after Redshirts? Try Year Zero by Rob Reid.
If part of what you like about The Hobbit is that it's enjoyable for grownups, while being very accessible for the young-uns, try Tailchaser's Song by Tad Willams. Also great if you love cats. :)
Other general recommendations:
Expendable by James Alan Gardner- an easy, fun space adventure.
Damocles by S.G. Redling - a first contact novel with a little bit of a Stargate Universe feel.
The Golden City by J. Kathleen Cheney Sirens/Selkies ect. in a Portugal type setting.
