The juice of one large freshly squeezed lemon

An equal amount of olive oil

A handful of freshly shredded Parmesan

Thinly sliced red onion to taste

Whisk lemon juice and olive oil until it's creamy. Dump onto the arugula. Add the rest of the ingredients. Mix. EAT!

My dear friend Kat James taught me this recipe, and for a while I was eating it every night. You can add blueberries for a fun taste or pine nuts. I've heard watermelon chunks are delicious, too.

Quinn | 21 comments I had to google arugula - we call it rocket, which I love. I know it's not so healthy, but it's also yummy with salt flakes (used sparingly, of course!) or bacon.

Pamela (pamela_clare) | 370 comments I think it's probably yummy with anything. I grew my own this year. Washing those tiny leaves is a bit of work, but having it at hand every day... I got spoiled! Love it!

Oooooh, this sounds so, so good! I'd toss feta cheese in there too. But let's be honest, I'd toss feta cheese into just about anything!
