I really don't feel like cooking...

I had pizza.

I went out for dinner and had a corned beef sandwich.

stuffed bowtie pasta alfredo and tiramisu.

Chicken Marbella has capers olives wine and yummy.

I want to go out to dinner with Michael.

I had my dinner at like, 3PM. Chinese food, and I'm still full. Ice cream for dessert later!

I took the family out for Thai food.

Tonight, maybe Tuna Helper as a treat for grandpa. When I make fresh stuff for the family he generally gripes. Once in a while I throw him a bone (metaphorically, people, metaphorically).

Lent starts this week (Ash Wednesday is Mar. 9) so I need to dust off some good vegetarian recipes. I am going to try to eat less beef and chicken as my lenten resolution.

What's your strategy, Cynthia?

I'm making spinach lasagna rolls tonight.

that sounds so good. im having a good old frozen pasta dinner from the freezer tonight. nothing like flavorless alfredo and icky looking broccoli to really end the day...

I may be lazy and stop at the soup place tonight.

Strategy for less meat? Mostly, just focusing on a vegetable or bean base and going from there. I have plenty of good recipes, just have to take the time to plan ahead, soak the beans, get to the store, etc.

They were too moist. I should have baked them 5 minutes longer. I even let out the steam and they were too moist.

Soup. This is grandpa's lucky week.

Soup is good food.

My late father-in-law used to drive my late mother-in-law NEARLY INSANE...He would loudly slurp his soup, then moan deeply and say, "Oh for the love of God. There is NOTHING like a good soup."

Ann would roll her eyes and say, "Jesus, Jack would you just quit with the soup talk?"

Here you go, Michael! I substitute spinach for all the other vegetables. This is a go-to recipe for me...pretty easy.

Thank you! If you leave out the veggies (I could do without the onions, peas and carrots), how many cups of spinach do you use? Do you ever freeze the leftovers?

No sweat, sir. I've never frozen the leftovers but I've refrigerated them and they turn out fine. I'm not sure how many cups, honestly...I just keep some fresh spinach nearby and when I run out of noodles I don't use any more spinach. Maybe three cups? Four?

Tofurkey Italian sausage (genuinely good!)
brown rice
eggs
probably some couscous and some quinoa

Any suggestions?

Sarah, do you have a good recipe for pizza crust? Thin sweet potato slices and some spinach on a pizza is one of my favorites. The original version came from a place in Hawaii in a big wood oven, but crank up your oven all the way and it will work. Don't use a ton of cheese, and just a little smear of tomato sauce.

I love sweet potato on pizza!
I ended up going with chive linguini, chickpeas (canned), broccoli (frozen), spinach(frozen), olive oil and parmesan.
