If you mix peppermint pattie's and Chip's Ahoy cookies, it tastes almost exactly like Girlscouts Thin Mints!

I actually think it is, Dallas...of course I'm trying to eat healthier...and I have tons of Christmas candy.

I was thinking about that yesterday because I have the same issue. You can make peppermint bark (I think it's just melted white chocolate with crushed peppermint in it). I'm sure you can find more by googling it...

Peppermint bark: Just crush the candy canes and use Nestle's (or whatever brand) white chocolate chips. I microwave the white chocolate slowly and then mix in the candy pieces (I usually use a food processor/blender to make the pieces small) and pour it out on wax paper.

Here in Chicago, I keep the large wrapped candy canes in the pantry to use for the next year. I doubt that would work in a humid climate (my mother freezes them, so that might also work).
