For the KEEPER books I always get to see a rough grayscale sketch of the cover at a very early stage to make sure I like the direction (and before that I get to make a bunch of suggestions for the scene and whatnot)
I'll usually give a few notes based on the proof and they'll send me a revised grayscale sketch to see if I'm happy with the changes. After that I usually won't see the cover again until it's all shiny and amazing.

During your fall tour: Thursday November 5 3:30pm Hickleebee’s 1378 Lincoln Ave San Jose, CA 95125 I was wondering how long you will be there because I was planning to go after school, and with traffic, I might not get there until 4 pm. Also, will you be signing books, and can I bring my own books from home for you to sign?
