I'd say my favorite character to write is a toss up between Ivy and Bishop. Since the books are in first person, I'm really able to get into Ivy's head and deep into her character, which is always fun. And I love writing Bishop simply because he's such an amazing guy. His personality is so genuine and that makes him a joy to write. Thanks for the question!
