Hi Amanda,
I think you naturally end up finding the right dialogue because you're in a character's point of view (POV) writing, and their dialogue flows from there. Sometimes if a scene isn't working, I'll switch whose head it's in and try it again, and often that really works.
If you want great dialogue, check out Kristen Ashley's books. Sometimes I find myself actually talking in real life like one of her characters after I read one of her books. :) Kat Martin and Alexandra Ivy have excellent dialogue as well.
