Of all time, I would have to say Gomez and Morticia Addams. The most amazing chemistry ever. All the versions, from the Charles Addams cartoons to the 1960s TV show to the movies from the 1990s.
Other contenders would be Terry Pratchett's Moist von Lipwig and Adora Belle Dearheart. Two characters who really challenge and compliment one another. Practchett's books are a bit absurd, but there's a lot of tructh shining through, and his relationships are no exception. Sam Vimes and Lady Sybil are in the running for the same reason.
These are all fairly rare examples of couples that are partnerships, not just people who fall into a whirlwind romance, but who play off one another and change one another and grow to be more than the sum of their parts.
