The answer will not be a literary one, sorry fellow bookworms. I'm going to say Rose Quartz and Greg Universe from the TV show Steven Universe. Never have I seen or read such an incredibly-written, mature, and deep relationship. Both characters grow as people (in Rose's case, as a sentient alien space rock) and together with each other. That's how I think love should be.
