Tough question, and I'm stuck between Elizabeth Bennett and Mr Darcy, in Pride & Prejudice by Jane Austin and Ollie and Jenny, in Love Story by Erich Segal.
The reason is probably because the couples came from different backgrounds, both the men were very wealthy and came from important families, the women were from more modest families. Yet their love of the women made them aware of their own narrow knowledge of life, and their prejudices, and and I believe made them better people.
