I want to know what way is easier because I've been told outlining helps Tremendously.

I'm in between of outlining and just go with it.

where has outlining help you

Outlining is another way of planning a story or series to make it flow better. I've outlined a story plot for a story that almost went into a series.

Now, if you go with it, you might get off topic or end up forgetting what you're writing about.
