If childrens/kids doesn't show up on review, it won't come up. But, I looked at the genres not on the main page, and there are a number of variations on childrens and only 4 main page genres currently showing. Because of this, you are running quite a risk of posting it and having childrens show up at the time of review.
Using kids books that don't meet the SRC requirements is always a risky proposition.

The two entries in the series I am specifically wondering about (for this season's challenge) would be The Best American Infographics 2015 and The Best American Infographics 2016 Thanks! :)

If those books contain commentary or analysis they might work. A collection of infographics would probably not.

It was the "substantial" bit that I was noodling over. Each infographic is accompanied with a few paragraphs explaining methodology or reasons for artistic choices, etc., and none of the infographics make sense if you take out their words but that together is probably not enough for SRC tasks. Which is why I thought I'd check first. ;) Thanks!

However, I want to confirm that I can read the entire omnibus edition and count it as a single book for a task.
I am hoping to read Sand Omnibus for task 20.5, option 3. If the cover meets the task requirements, would the omnibus edition be acceptable?
