Some woman has to go on a journey to save a prince trapped in the body of a black stallion. I think she saves him in the end and they fall in love. The cover had a red rose on it. I think I read this around 2001. Thanks!

That sounds similar, but the one I'm thinking of didn't take place in Egypt. The female protagonist is just a normal woman, and I remember a lot of her journey taking place in a forest.
