Adult nominations:
Painted Hands: A Novel has been on my to-read list for a while.
Love, InshAllah: The Secret Love Lives of American Muslim Women This is nonfiction and people on the internet who I respect recommended it.

YA nominations:
Ten Things I Hate About Me This is my favorite Abdel-Fattah book so far.
From Somalia with Love This author's other book was OK. Not great, but ok. Which is saying something, cause most Muslim YA is terrible.

Glad you're here to make suggestions! It's hard looking for random things when you're not connected to the diversity issue at hand and can be out of the loop for problematic stuff. Partly since I just want everyone to constantly read Naguib Mahfouz and there's a modern world beyond him.

Though for any other non-fiction lovers/history buffs, Destiny Disrupted: A History of the World Through Islamic Eyes by Tamim Ansary is an incredible book. Feels too long to officially suggest here though.
