For my current writing project, I have a shapeshifting POV character.
So, for inspiration, I'm looking for a DS9 book with good scenes written from Odo's POV, particularly while he's in a different form besides his natural form and Humanoid form.

Siege by Peter David dealt a lot with Odo and what he could do.
It was written when the TV show was still trying to figure it out as well.
Plus, it's a good story.
