Sorry of my english in advance ... I'm looking for romantic(erotic) books or series with human females and non-human males , where at the end they stay together like a "happily ever after" kind of ending ....

Savage Lands is a series by Stacey Marie Brown that has an amazing slow burn. It's a series that's still in progress, so I don't know if it will have the happily ever after ending though.
There's also Dark Lover by J.R. Ward.
Another vampire one is the The Dark Ones
