It's a perplexing aspect of the series. It's just not worth the risks. And, the demons seem to be especially adept at creating contracts with cagey loopholes. I get why Rachel did as she was essentially blackmailed. But Nick? Lee?

Isn't that always the case? :0)

Like with Ceri who didn't want to age or die and was willing to sell her soul, so Nick and Lee want the power that comes with dealing with demons. It is rare that people in these situations think through the consequences.
