"Scientific Creationism" by Henry Morris is a conerstone for any Christian who isn't sure about evolution and the Bible.

Inside Scripture: "Open Letter to Evangelicals" by R.E.O. White made me dig into 1 John.

Inside - NT Wright's Jesus and Victory of God - Made me look at the Gospels in a whole new, fuller and deeper way.

The Tests Of Life: A Study Of The First Epistle Of St. John - Robert Law gave the book of 1 John plain understanding and good organization.
An example for me: "Desiring God" by John Piper really stretched me out of my comfort zone.
"End Times Fiction" by Gary Demar drove my wife and I to read the entire book of Revelation and set us on course for a massive Bible Study to try to figure out what scripture says about the end times.
